Ingredients
2 cups flour
2 cups sugar
100 grams butter
3 tablespoons instant coffee powder
2 whole eggs
1/2 cup buttermilk
1 teaspoon baking soda
2 teaspoons vanilla essence
1/4 teaspoon salt
Ingredients – For the icing:
50-75 grams butter
400 grams powdered sugar
2 tablespoons instant coffee powder
4 tablespoons heavy cream
1/4 teaspoon salt
Method:
Preheat the oven to 180 degrees celcius. Take two cake pans. Grease them and sprinkle flour on them and set aside. In a bowl, thoroughly mix the flour, sugar and salt. Melt the butter in a pot over low heat. While the butter melts, take the coffee powder and add it to one cup boiling water and stir till all the coffee granules dissolve. Add this to the melting butter and boil for about a minute and then set it aside. Combine the buttermilk, eggs, vanilla extract and the baking soda till it’s well blended. Add the coffee mixture into the flour mixture and blend it well. Stir it until the temperature of the coffee and flour mix cools down enough to add the egg mix to it. Gently fold in the egg mixture into the flour and coffee mix. Do not whisk rapidly. Take your time with this step and fold until everything is blended together. Pour the coffee cake batter evenly into the two cake pans. Bake each pan at 350 degrees for about 20 minutes. Let the cakes cool before taking them out of the pans
For the icing, combine the icing sugar, butter and coffee powder in a bowl. Add two tablespoons of whipped cream at a time and whip the ingredients on high. The icing should look soft and fluffy and easily spreadable. Once this is done, place one cake on a serving dish and add the icing in an even layer on top. Put the second cake on this and spread the remaining icing evenly on the top surface as well as on the sides of the cake. Refrigerate for an hour or so until the icing sets. Enjoy!
