Ingredients:

  • ½ cup all-purpose flour
  • 1 tbsp lemon pepper seasoning
  • 1 tsp kosher salt
  • 2 lemons, divided
  • 1 lb. boneless skinless chicken breasts halved
  • 2 tbsp extra-virgin olive oil
  • ½ cup chicken broth
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • Freshly chopped parsley, for garnish

Preparation

  • Start by preheating the oven at 400°. Whisk together the flour, lemon pepper seasoning, salt, and lemon zest in a bowl. Toss in the chicken and coat it with the mixture. Cut the remaining lemon into thin, round slices.
  • Heat oil in an ovenproof skillet over medium-high heat. Add the chicken and let it cook for five minutes or until it turns golden brown. Flip to the other side and wait for it to cook evenly.
  • Add the chicken broth, garlic, butter, and cut lemon slices, and set it to bake until the chicken is evenly cooked and the sauce is reduced. The whole process should take only about 15 minutes.
  • Serve the dish after spooning out the sauce. Garnish it with parsley.

Grilled Chicken Breast

Ingredients:

  • ¼ cup balsamic vinegar
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • Freshly chopped parsley, for garnish

 Preparation

  • Whisk balsamic vinegar, olive oil, brown sugar, garlic, and dried herbs in the bowl. Season it generously with salt and pepper. Keep aside ¼ cup of this mixture.
  • Add the chicken to the bowl and lightly toss to combine. Let this mixture marinate for at least 20 minutes or overnight to ensure that the flavors soak in.
  • Start by preheating the grill. Add in the chicken and baste it with the marinade for approximately 6 minutes on each side.
  • Garnish the dish with parsley.
